Ebelskivers



Sarah had to do a Heritage Project for school back in December. We chose to do it on Denmark. My mom's fathers' family was from Denmark. In our research we found that ebelskivers are a Danish pancake. Tradition says that when the vikings would come back from battle they would use their dented shields to cook the pancakes on and this is why they are round. When I told my mom about them she said that she remembered her grandma making them. For my birthday, my mom got me an ebelskiver pan!! =) I was so excited...I know, it's just a pan, but I wanted to start making these and carry on a forgotten tradition. We like them best with jam in the middle and of course powdered sugar on top! =) They are yummy little pancake balls =)

Oooh, sounds and looks yummy. Wait til Sam reads your post...he loves that his heritage includes Vikings! He's always telling me how his Viking ancestors could and did kick my Greek ancestors butts. Whatever. I have to go give him his hemlock soda now...

We had these when I was growing up - everyone thinks I'm crazy when I talk about them - I'm glad someone else has tried them now as well :) I sure like them!
